 Raspberry Marinade

 

Especially good for duck or Cornish hens...
 

3 cups 

 

fresh raspberries

 

1 cup 

 

raspberry vinegar

 

¾ cup 

 

olive oil

 

2 Tbs 

 

fresh thyme

 

 

 

fresh ground pepper

Combine raspberries and vinegar in a saucepan. Bring to a boil, boil for one minute, and then remove from heat. Stir in oil, thyme and pepper. Cool to room temperature.

Pour marinade over boned duck breasts or split Cornish hens. Marinate overnight in the refrigerator, turning occasionally.

Bake or grill meat. You can baste with the marinade, but only if you heat the marinade up to boiling point first.
